Hand-harvested, de-stemmed and then fermented in 50% stainless steel and 50% old french oak.
Enticing aromas of lemon, gooseberry and tropical fruits on the nose, followed by hints of green apple and lemongrass on the palate, all balanced by crisp, lingering acidity.
Wine was left on lees for 5 months to develop complexity prior to bottling.
