2008 Billanook Sparkling

This 2008 vintage sparkling was made from 60% Chardonnay and 40% Pinot Noir grapes grown on the estate vineyard and made in the traditional méthode champenoise style. This crisp dry sparkling has a fine bead and was matured for a minimum period of 2 years to develop a rich and creamy texture.

2005 Cabernet Sauvignon - Merlot

This 2005 Cabernet Sauvignon (70%) and Merlot (30%) is dark brick red in colour with aromas of blackberries, black cherry, chocolate and coffee. Rich ripe fruit fill the mouth with lingering flavours of mocha coffee on the palate and soft fruit tannins on the finish. This wine is further enhanced by maturation in French oak barriques for over 14 months. Will develop with further cellaring.
